NYE appetizers

I got all fancied up to go to a New Year's Eve party (well, as fancy as jeans and a new green blouse can be), but somehow the only pictures I have of the night are the appetizers I made to bring. Focus on food much, Tammy? haha

First one was my hands-down favorite. French bread crostini topped with a thick slice of roast beef from the deli, a dallop of horseradish sour cream and arugula. Beautiful, easy, tasty and low in WW points. One thing I would do different is cook the bread for a shorter time period...it was too crunchy and hurt my mouth. I think it was the only thing that prevented me from eating all of them before we left the house, so maybe I should keep the cooking time exactly the same next time. They weren't yellow...my phone took a weird picture.

The next one was a dip made with tons of stuff...roasted red peppers, garlic, onion, cream cheese, chipotle sauce, etc etc. It was good but too much work. You're supposed to "stuff" the endives with it, but that was going to be too much work. I would make it again, but with some tweaking.
